The Code 39 Extended is able to use any combination of digits / characters / letters between ASCII 0 and ASCII 127. You can select to use the checksum or not. You will be able to show (default) or hide the start/stop characters, that's the * in the barcode image.
ASCII characters.
In the barcode input you will be able to right click to access the supported ASCII, e.g. Form Feed, FF and all other supported ASCII. You could also use [FF]. Only software solution with this option.
